This PR removes the pinned version constraint for the OpenAI dependency, allowing the package to use any available version of the openai library. The change removes a temporary workaround that was preventing a Union instantiation bug with pydantic-ai 0.6.x.

• Removes the openai version pin that was capped at 1.99.1
• Eliminates the temporary workaround for a pydantic-ai compatibility issue
